RICE AND WHEAT BERRY PILAF WITH BABY SPINACH
- ¾ C. Bob's Red Mill wheat berries
- 1 ½ tsp. salt
- ¾ C. basmati rice
- 16 oz. pkg. baby spinach
- 5 ¾ C. water
- 1 Tbs. EVOO
- 3 cloves garlic
Place wheat berries in a bowl and cover with 3 in. water.
Soak wheat berries overnight. Drain.
Bring 4 cups water to a boil, with salt.
Add wheat berries and reduce to a simmer.
Cook until berries are tender. Drain.
Heat oil in a large saucepan over medium heat, add rice and garlic; stir 1 min.
Stir in the remaining 1 ¾ c. water bring to a boil.
Reduce heat low, cover and cook until liquid is almost absorbed and rice is tender, about 15 min.
Add spinach and cook wheat berries; stir until spinach wilts and wheat berries are heated through, about 3 min.
