Ingredients

  • 2 medium white onions- diced
  • 4 lbs fresh ground beef, preferably ground chuck
  • 2 large eggs, beaten with a tablespoon of water
  • 1 cup Italian- seasoned bread crumbs
  • 1 teaspoon salt and 1 teaspoon freshly ground black pepper
  • 1 cup grated parmesan cheese
  • 1 tablespoon freshly chopped parsley

Directions

Place all ingredients in a large mixing bowl, using your hands blend together

Try not to mash the meat, instead toss it around to keep it a bit loose

Form the meat mixture into balls the size you like- smaller for appetizers, bigger for spaghetti and meatballs

Fry the meatballs in a bit of oil in a large skillet, working in many batches

Cook until no longer pink inside- meatballs may be baked in a 350° F. oven for about an hour

Can be made ahead and frozen for up to 3 months
