This dish is a great accompaniment to baked or grilled pork chops and roasted sweet potatoes.

Makes 6-8 servings

Ingredients

  • 5 tablespoons white balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 2 tablespoons lightly toasted pine nuts
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon extra virgin olive oil (EVOO)
  • 1 pound baby kale (or small leaf with ribs removed)
  • 1/4 cup shaved parmesan

Directions

Whisk balsamic vinegar, rice wine vinegar, honey and salt together in a large bowl

Slowly add EVOO

Add kale and pine nuts until coated

Let marinate for 20 minutes

Adjust salt and pepper to taste

Add parmesan just before service
