Our Favorites

Kansas City Strip - Lean, tender and full-flavored. Available boneless and bone-in with a fine-grain and sturdy texture. Bone-in Ribeye (Cowboy Ribeye) - A rib steak that is fine-grained and juicy with generous marbling throughout. We’ve left the bone on for a rich, beefy flavor. One of the most tender beef cuts. Tenderloin/Filet Mignon - The most tender beef cut. Lean yet succulent, elegant and convenient. Buttery texture, subtle flavor and compact shape.

Poultry

Cosentino’s Market procures only the freshest poultry available, such as Smart® Chicken, and local Campo Lindo Farms chicken. All Smart Chicken products are raised without animal by-products, antibiotics, or hormones, are 100% all-natural, and are processed using purified cold air – that’s The Air-Chilled Difference. When it comes to cooking chicken, we believe in the beauty of the basics. Start with high quality fresh, never frozen chicken, and use simple methods and basic seasonings.

Classic Whole Roasted

We favor Julia Child’s recipe . It’s very easy and very tasty!

Grilled Pieces

For grilling, we recommend rubbing the chicken parts with olive oil and then liberally seasoning with salt and pepper. Pre-oil the grill grate and allow it to heat over medium coals for a few minutes, then place chicken parts on the grate. Grill for 10 minutes, and then turn the parts over. Continue grilling until internal temperature reaches 170 degrees Fahrenheit. Remove from grill and allow chicken to rest for 10 minutes before serving.

Easy-Baked Pieces

Pre-heat the oven to 400 degree Fahrenheit. Toss the chicken parts in a blend of olive oil, salt, pepper, and dried Italian Herbs. Bake the chicken for about an hour, or until the skin is golden brown and internal temperature is 170 degrees. Remove from oven and allow chicken to rest for 10 minutes before serving.

Our Favorites

Thick Cut Loin Chop – We cut these beauties from the bone-in loin into a generous inch and a half thickness. The perfect pork to grill for that restaurant chophouse taste. Pork Tenderloin – This is the most tender of all pork cuts, and is excellent when seasoned with your favorite marinade or rub. Baby Back Ribs – Cut from the backside of the bone –in loin, the baby back (or loin back) rib is easy to cook and is more lean than a traditional spare rib. Housemade Italian Sausage – Made fresh right here in the store, we use a secret family recipe that you will enjoy as grilled links or used in your favorite pasta recipes. Available mild or spicy.

Lamb and Veal

Lamb

Lamb is typically the meat from young sheep. We primarily sell American lamb which is much fresher than imported lamb. Our favorite cuts are Loin chops and Leg of Lamb. Let our team of professionals assist you in selecting the lamb or veal cut most suited to your needs.

Veal

Veal is the meat from young cattle, and is often used in the form of cutlets, such as the Veal Parmigiana or the famous Austrian dish Wiener Schnitzel. As veal is lower in fat than many meats, care must be taken in preparation to ensure that it does not become tough. Veal is often coated with bread crumbs in preparation for frying or eaten with a sauce.
